I have been a registered dietitian for over 25 years. I have worked with people with chronic kidney disease (CKD) and end-stage kidney disease (ESKD) for over 10 years.
Over the years, I've seen my clients with kidney disease feel so frustrated and overwhelmed with all of the diet advice and restrictions that they barely eat! Or some give up trying and just eat anything!
Others just don't have the energy, money or cooking skills to prepare the food that they believe they are "supposed" to eat.

It's true that not everyone with kidney problems needs to limit potassium and phosphorus (most are advised to watch their sodium intake). However, it's a priority of mine that The Everyday Kidney Cook be a safe space for anyone with kidney disease!
Therefore, all of our recipes are appropriate for any stage of kidney disease, meaning they are lower in sodium, potassium and phosphorus, unless otherwise stated. (Some portion adjustments may be necessary for some foods for those needing a lower protein diet).
